Ingredients:
2 oz. Compass Distillers’ Spiced Rhumb
1/2 oz. fresh-squeezed lemon juice
1.5-2 oz. Wild Blueberry Herb Syrup (recipe below)
4 oz. Hot water
Lemon slice & fresh rosemary for garnish
Pour the spiced rhumb, lemon juice, and blueberry syrup in a mug, and top with about 4 oz of hot water. Add a lemon slice and fresh rosemary for garnish. Enjoy!
Wild Blueberry Herb Syrup
Ingredients:
1 cup frozen wild blueberries*
1 cup water
1/2 cup honey
Several sprigs of a fresh herb of your choice (I used rosemary)
2 teaspoons fresh lemon juice
Combine the blueberries, water, honey, and herb sprigs in a saucepan over low heat and stir. Increase heat to medium and bring the mixture to a gentle boil, and simmer for 10-15 minutes, until syrup is starting to thicken. Stir in the lemon juice and remove from heat. Allow syrup to cool before straining out the fruit and herbs with a mesh strainer.
Syrup will keep in the fridge for up to 2 weeks.
*Regular blueberries will also work great. And I used frozen blueberries but fresh would work great too!
